Tarta De Santiago (almond cake from Galicia)

The famous almond cake of the city of Santiago de Compostela in Galicia, Spain, is traditionally decorated with the cross of St. James and enjoyed by peregrinos upon completion of the camino.

This is the recipe Emma made for Gary’s 60th birthday.

Tarta De Santiago

Ingredients

  • 4 eggs
  • 1 cup sugar
  • 2 cups almond flour (or ground almonds)
  • zest of 1 lemon
  • 1/2 teaspoon cinnamon

Instructions

  • Preheat oven to 350F
  • Line the bottom of a springform pan with parchment and butter the sides.
  • Whisk eggs and sugar together in a mixing bowl until nice and light.
  • Add the almond flour, lemon zest, and cinnamon until just combined.
  • Pour the mixture into the spring pan and back for 30 minutes, until a toothpick comes out clean.
  • Allow the cake to cool 10-15 before removing the outer ring.
  • Once the cake is completely cool, dust the top with confectioners sugar, using a stencil if you prefer.
