This simple, hearty soup is almost rich enough to consider a stew, and is a healthy, warming winter dinner.
Split Pea Soup
Ingredients
- 1.5 cups split peas
- 7 cups water
- 4 slices bacon
- 1 pork chop
- 1 cube chicken bouillon
- 2 carrots
- 2 stalks celery
- 1 leek
- 1 white onion
- 1 celery root
- 1 Idaho potato, peeled
Instructions
- Boil water, bouillon, split peas, bacon, and pork in a large pot.
- Meanwhile chop all the vegetables.
- Skim any foam off the pot.
- Remove the bacon and pork chop to a cutting board and cut into cubes.
- Add vegetables, pork, and bacon back into the pot amd simmer until tender. Add additional water or chicken stock if needed to get the consistency you prefer. Serve with crusty bread.
