White Bean Brandade

A fast, easy, vegetarian alternative to codfish brandade, this makes a great accompaniment to tapas, appetizers, crudite, etc. It’s like a Provençal alternative to hummus.

White Bean Brandade

Ingredients

  • 2 or 3 cloves garlic
  • 1/2 teaspoon salt
  • 1/4 cup olive oil
  • 2 cans cannellini or other white bean
  • 1/4 cup milk
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh parsley
  • white pepper to taste

Instructions

  • Chop and mash the garlic and salt together, using the side of the knife to create a paste (or use a mortar and pestle).
  • Purée the white beans with the garlic and 1 tablespoon of olive oil in a food processor.
  • With the motor running, slowly add the rest of the oil, then the milk, then the lemon juice in that order. If the consistency is too thick, thin with a bit more milk as needed. Add salt and pepper to taste.
  • Transfer to a serving bowl and top with the fresh parsley. Serve with warm bread or crostini.
