The best thing on the menu at Soccorat, the Spanish restaurant across the street from Olivia’s first apartment in NYC, was dates stuffed with goat cheese and wrapped in bacon. She became obsessed.
You know what is even more amazing? Wrap them in jamón serrano or even prosciutto.
Olivia’s Dates
Ingredients
- 12 medjool dates
- 6 strips of bacon or slices of jamon
- 3 ounces goat cheese
- 12 Marcona almonds
Instructions
- Preheat oven to 350F
- Soak 12 toothpicks in a bowl of water.
- Slice dates lengthwise and remove the pit.
- Fill the space left by the pit with goat cheese, then press a single almond in the cheese, and press the edges of the date together to seal.
- Cut the bacon or jamón pieces in half, and wrap around each date, and secure with soaked toothpick.
- Place on a rimmed baking sheet and bake about 15 minutes, turning over midway through.
