Garlicky White Beans

Beans are a great alternative starch to serve with the protein of your choice instead of rice, pasta or potatoes. This dish is a particularly perfect companion to lamb chops or ribeye, but it makes a great tapa on its own as well.

Cannellini & Spinach

Ingredients

  • 1 onion
  • 6 cloves garlic
  • 1 tablespoon Herbs de Provençe
  • 2 cans cannellini beans
  • 1/4 to 1/2 cup white wine
  • olive oil
  • 2 cups spinach

Instructions

  • Rough chop onions and garlic. Saute in olive oil.
  • Add herbs, beans, wine, and salt to the pot.
  • Simmer 30 minutes.
  • Chop spinach, add to pot.
  • Once spinach is cooked, adjust consistency with a bit of water or white wine and serve.
