Beans are a great alternative starch to serve with the protein of your choice instead of rice, pasta or potatoes. This dish is a particularly perfect companion to lamb chops or ribeye, but it makes a great tapa on its own as well.
Cannellini & Spinach
Ingredients
- 1 onion
- 6 cloves garlic
- 1 tablespoon Herbs de Provençe
- 2 cans cannellini beans
- 1/4 to 1/2 cup white wine
- olive oil
- 2 cups spinach
Instructions
- Rough chop onions and garlic. Saute in olive oil.
- Add herbs, beans, wine, and salt to the pot.
- Simmer 30 minutes.
- Chop spinach, add to pot.
- Once spinach is cooked, adjust consistency with a bit of water or white wine and serve.
