Chorizo in puff pastry

Maggie’s go-to hors d’ouevres for parties and last minute snacks…she always had puff pastry in the freezer and chorizo in the fridge. She famously made this for Gary to bring to a New Year’s Eve party with his girlfriend Anne’s family in 198X—perhaps the McDonald clans’ first encounter with Sueiro cooking-and apparently they were a big hit. It’s not much of a recipe, but that’s the whole point…if you really want to work you could make empanadilla dough from scratch…

Maggie’s Chorizo Puffs

Ingredients

  • 1 package frozen puff pastry
  • 2 packages Palacios chorizo (about 12 ounces)
  • olive oil

Instructions

  • Slice the chorizos into coins about 1/4 inch thick.
  • Thaw the puff pastry and cut into 2“ squares.
  • Place a piece of chorizo in the center of each pastry square and fold the corner of the pastry over to cover the chorizo.
  • Place the puffs on a baking sheet, and brush the tops lightly with olive oil.
  • Cook in a preheated oven until the pastry turns golden brown. (Consult the pastry package for specific cook time and temperature.)
