One Mother’s Day long ago, Luis and Antonio wanted to make their mother cinnamon rolls for breakfast. Very altruistic of course. I searched online and found a very easy recipe to make with young kids, not expecting the best results. They were everything you hope for when you smell fresh cinnamon rolls.
Cinnamon Rolls
Ingredients
Rolls
- 2 1/2 cups all-purpose flour
- 2 tablespoons granulated white sugar
- 1 1/4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cup buttermilk
- 6 tablespoons unsalted butter, melted
Filling
- 3/4 cup dark brown sugar
- 1/4 cup white sugar
- 3 teaspoons cinnamon
- 1/8 teaspoon salt
- 1 tablespoon butter, melted
Frosting
- 8 ounces cream cheese
- 1/2 cup butter
- 1 teaspoon vanilla extract
- 3 cups confectioners sugar
- 1 tablespoon milk
Instructions
- Preheat the oven to 425F.
- Grease a 9-inch round cake pan with vegetable oil.
- Make the filling: Combine sugars, cinnamon, salt and melted butter and mix until consistency of wet sand.
- Make the dough: in a large bowl, combine flour, sugar, baking soda, baking powder, and salt.
- In a separate bowl, whisk together buttermilk and 2T melted butter. Add to flour mixture and stir until just combined.
- Turn out the dough onto a well-floured cutting board and knead until smooth, about one minute.
- Gently shape dough into a rectangle, roughly 9 x 13.
- Brush the dough with 2T melted butter.
- Sprinkle the filling on top of the dough, leaving a 1/2 inch border around the edge. Press the filling firmly and evenly into the top of the dough.
- Loosen the dough from the counter with a spatula, then roll the dough lengthwise into a tight log. Pinch the ends to seal.
- Cut the log into 8 even pieces, and place face up in the greased pan.
- Brush the rolls with remaining 2T melted butter.
- Bake 20-25 minutes until the edges are golden brown.
- Use a spatula to loosen each roll and flip onto a cooling rack.
- Make the frosting: Mix all the ingredients until smooth.
- Wait at least ten minutes before pouring or spreading the icing on the rolls. Note some people like me prefer them with no icing at all!
