Corn Fritters

Abuela would make ‘frituritas’ of just about anything. A quick batter could coat anything from plain vegetables to leftover bacalao for a deep fried snack. Our favorite as kids were these sweet corn fritters, which are basically just batter.

Corn Fritters

Ingredients

  • 2 cans creamed corn
  • 2 tablespoons flour
  • vegetable oil
  • salt

Instructions

  • Put creamed corn into a mixing bowl, and add flour until it has the consistency of a wet dough.
  • Heat 1/2 inch deep of vegetable oil in a saucepan.
  • Drop spoonfuls of the corn batter carefully into the hot oil to deep fry. Turn to get golden crispy all over, and use a slotted spoon to remove and drain on a paper towel. Add salt and serve.
