Garlic Mushrooms (Champiñones al Ajillo)

This simple classic is a great tapa or side dish. You can omit the flour and add a little white wine and butter for a brothier tapa to serve with bread.

Garlic Mushrooms

Ingredients

  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 tablespoons flour
  • 1 cup beef or chicken broth
  • 1/2 dried chili pepper optional
  • 2 tablespoons fresh parsley, chopped
  • 2 teaspoons lemon juice optional
  • 1/2 pound button mushrooms, whole, destemmed

Instructions

  • Heat olive oil in a skillet. Add mushrooms, and sauté until lightly browned.
  • Add garlic and saute until the garlic becomes fragrant.
  • Sprinkle with flour and stir to combine well.
  • Add broth, lemon juice and chili, stir until smooth and thickened.
  • Add the parsley . Stir well and simmer 5 minutes.
  • Remove from heat and serve.
