Black Eyed Peas salad
Ingredients
- 1 can Black Eyed Peas drained and rinsed
- 1 cucumber diced
- 1 red bell pepper diced
- 1 green onion finely sliced
- 1 tomato seeded and chopped
- 2 limes
- 1 tablespoon olive oil
- salt to taste
Instructions
- Mix peas and vegetables in a large mixing bowl.
- Squeeze juice from both limes over the veggies, add olive oil and salt, and stir to combine.
