Michelle Cake

Chuck & Michelle were neighbors of Therese’s in Puerto Escondido who became like grandparents to Luis and Antonio. Michelle’s almond butter cake is legendary. So fast and simple to make, it became a go-to recipe whenever a last-minute sweet is needed.

Michelle’s Almond Cake

Ingredients

  • 1 1/2 cups sugar
  • 2 tablespoons sugar
  • 3/4 cup butter, melted
  • 2 eggs
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup almonds, sliced

Instructions

  • Preheat oven to 350F
  • Line a 10” round baking pan with parchment
  • In a large bowl, stir together 1 1/2 cups sugar with melted butter.
  • Beat in eggs one at a time.
  • Sift in flour and salt.
  • Add vanilla.
  • Stir well and pour batter into pan.
  • Top with sliced almonds and 2 tablespoons of sugar.
  • Bake 35 minutes, or until golden brown on time and a toothpick comes out clean.
