Chuck & Michelle were neighbors of Therese’s in Puerto Escondido who became like grandparents to Luis and Antonio. Michelle’s almond butter cake is legendary. So fast and simple to make, it became a go-to recipe whenever a last-minute sweet is needed.
Michelle’s Almond Cake
Ingredients
- 1 1/2 cups sugar
- 2 tablespoons sugar
- 3/4 cup butter, melted
- 2 eggs
- 1 1/2 cups flour
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup almonds, sliced
Instructions
- Preheat oven to 350F
- Line a 10” round baking pan with parchment
- In a large bowl, stir together 1 1/2 cups sugar with melted butter.
- Beat in eggs one at a time.
- Sift in flour and salt.
- Add vanilla.
- Stir well and pour batter into pan.
- Top with sliced almonds and 2 tablespoons of sugar.
- Bake 35 minutes, or until golden brown on time and a toothpick comes out clean.
