A fast, refreshing salad for lunch or as a side to any summer fare.

Black Eyed Peas salad

Ingredients

  • 1 can Black Eyed Peas drained and rinsed
  • 1 cucumber diced
  • 1 red bell pepper diced
  • 1 green onion finely sliced
  • 1 tomato seeded and chopped
  • 2 limes
  • 1 tablespoon olive oil
  • salt to taste

Instructions

  • Mix peas and vegetables in a large mixing bowl.
  • Squeeze juice from both limes over the veggies, add olive oil and salt, and stir to combine.
